What is "edge grain" on the cutting boards description above?

When making cutting boards there are 3 different ways to orient the wood. The first method is a face grain board, the cutting surface is on the face of the wood. Typically that is how tables and furniture tops are made. This is the least expensive and shows the most marks when cutting on them.

Secondly is edge grain. Think of the face grain board, now turn each piece 90 degrees, so the edge is facing up and is now the cutting surface. The edge is more forgiving and the fibers of the wood microscopically spread as the knife comes in contact with the wood, and then return yo their original orientation, saving some of the cut marks. The majority of boards are edge grain. They have a longer life than face grain and are midpoint in price.

Lastly is the end grain orientation. You take the edge grain piece and stand it on its end. The top is now your cutting surface. Each piece is precut to the thickness of the finished board (add a little thicknesses for planning and sanding) and attached to the piece next to it until you have the size of the board you want. The end grain acts like the edge grain only on steroids. End grain boards are sometimes referred to as self healing, as the fibers spread and return to their original orientation. End grain is difficult to work with from a woodworker perspective, difficult to sand and very difficult to plane to the proper thickness. Add to that the amount of individual pieces needed to build the cutting board makes the edge grain the most expensive style of board.
